Main ingredients include:

  • White bean paste – Smooth and sweet, made from white kidney beans. This forms the base of the nerikiri and is easy to color and shape.

  • Sugar – Adds sweetness and preserves the soft texture.

  • Japanese yam (Yamato or Nagaimo) – Used as a binder to give the dough a smooth, elastic consistency.

  • Agar (Kanten) – Occasionally added to improve firmness or for decorative parts.

  • Salt – Just a pinch, to enhance the overall flavor.
